Conching lasts from four to
seventy two hours, the longer it
takes the higher the quality of
the chocolate. After conching,
the chocolate is stored in heated
tanks (approximately 45-50 degrees
celsius) to wait for final
processing.
Signature blends are developed by
different manufacturers by
changing the proportions of the
ingredients shown above. The
finest plain dark chocolates
contain at a minimum 70% cocoa (a
combination of solids and butter.)
Chocolate contain several
substances, some of them are
considered addictive, and are in
such small amounts as to be non
addictive.

Caffeine a stimulant found in
coffee and tea is also found in
small amounts in chocolate.
Anandamide or the main
psychoactive in marijuana, which
is also produced by the brain.
Sugar, even though cocoa
doesnt contain a lot of sugar,
chocolate bars do.
Tryptophan a precursor to
serotonin which is involved in
regulating moods.
Phenylethylamine, an
amphetamine, often described as
the love chemical it is quickly
metabolized so very little
actually reaches the brain.
Theobromine the primary
alkaloid in cocoa and chocolate is
one cause for the mood-elevating
effects of chocolate. Theobromine
is also a big factor in acid
reflux as it relaxes the
esophageal spincter muscle, which
allows stomach acid to more easily
enter the esophagus.
